Oil must read below 50 °C on the probe thermometer before the drain valve is opened. Do not proceed on a warm vat.
Filtering recovers roughly 60% of the oil charge and is the single biggest driver of fry-oil cost per cover. Work the sequence below with the vat isolated and the filter pan seated fully under the drain.
Confirm breaker at panel B is off and tagged. Verify oil temperature ≤ 50 °C.
Seat the filter pan and lock the caster brake. Fit a fresh filter envelope.
Open the drain valve one quarter turn. Let it run; do not force debris through.
